- 1 cup dry quinoa
- 1 bunch of kale, de-stemmed and chopped (about 3 cups)
- 2 celery stalks, chopped
- 1 medium apple, chopped
- 1 15 oz. can of navy beans, drained and rinsed well
- ¼ cup dried cranberries, chopped
- ¼ cup walnuts, chopped
- Homemade Apple Cider Vinaigrette for topping
