Kale and Quinoa Salad

Ingredients
  • 1 cup dry quinoa
  • 1 bunch of kale, de-stemmed and chopped (about 3 cups)
  • 2 celery stalks, chopped
  • 1 medium apple, chopped 
  • 1 15 oz. can of navy beans, drained and rinsed well
  • ¼ cup dried cranberries, chopped
  • ¼ cup walnuts, chopped
  •  Homemade Apple Cider Vinaigrette for topping
                                                Directions
  • Cook the quinoa in 2 cups of water
  • Combine all other ingredients in a large bowl
  • Add in cooked quinoa and then toss with dressing. 
  • May add salt and pepper if needed
  • Serve cold
