Oatmeal Chia Muffins

  • 1 cup oats
  • 1.5 cups whole wheat flour
  • 2-3 tbsp vital wheat gluten
  • 1 tbsp chia seeds
  • 2 tbsp flax seeds
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 6oz coconut oil, melted
  • 1 1/2 cups plain greek yogurt
  • 1/4 cup honey
  • 1/4 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • Preheat oven to 350
  • Grease muffin tins(about 2-2.5 dozen)
  • In a large bowl, combine oats, flour, wheat gluten, chia seeds, flax seeds, baking soda and salt. 
  • In another small bowl, mix yogurt, honey, brown sugar, eggs and vanilla. Melt the coconut oil and then mix in with other wet ingredients. You may have to mix a while til the oil starts solidifying again and you have a more homogenous mixture.
  • Pour wet mixture into dry mixture and mix until just combined. Dont overmix as this will make your muffins more dense.
  • Spoon batter into muffin tins, filling 1/2-3/4 the way full
  • Bake at 350 for 15-20 mins or until a toothpick comes out mostly clean.
