Ingredients
- 1 cup oats
- 1.5 cups whole wheat flour
- 2-3 tbsp vital wheat gluten
- 1 tbsp chia seeds
- 2 tbsp flax seeds
- 1/2 teaspoon baking soda
- pinch of salt
- 6oz coconut oil, melted
- 1 1/2 cups plain greek yogurt
- 1/4 cup honey
- 1/4 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla extract
- Preheat oven to 350
- Grease muffin tins(about 2-2.5 dozen)
- In a large bowl, combine oats, flour, wheat gluten, chia seeds, flax seeds, baking soda and salt.
- In another small bowl, mix yogurt, honey, brown sugar, eggs and vanilla. Melt the coconut oil and then mix in with other wet ingredients. You may have to mix a while til the oil starts solidifying again and you have a more homogenous mixture.
- Pour wet mixture into dry mixture and mix until just combined. Dont overmix as this will make your muffins more dense.
- Spoon batter into muffin tins, filling 1/2-3/4 the way full
- Bake at 350 for 15-20 mins or until a toothpick comes out mostly clean.
