Ingredients:
Nut loaf with PB, banana and honey. |
- 1 cup raw sunflower seeds
- 1/2 cup flax seeds
- 1/2 cup sliced almonds
- 1 1/2 cups rolled oats
- 2 tbsp chia seeds
- 3 tbsp psyllium seed husk powder
- 1 tsp salt
- 1 tbsp honey, warmed
- 3 tbsp coconut oil, melted
- 1 1/2 cups water, warm
- In a bread loaf pan (no bowl needed!), combine all the dry ingredients.
- In another bowl, combine the whisk together water, honey and coconut oil (I had mine heated because the cold water will solidify the coconut oil)
- Add the liquid mixture to the dry ingredients and combine until completely soaked through
- Smooth the top and let it sit at room temperature 2-4 hours, or even overnight
- Preheat oven to 350
- Bake bread for 20 mins, then remove bread from pan and place it upside down directly on the rack and bake another 30-40 minutes (I placed a sheet pan on the rack below the bread incase any crumbs fell)
- Let cool completely before slicing.
