Nut Loaf

 Found this recipe on Yahoo Food and I just HAD to try it. It's different but tasty.

Ingredients:
Nut loaf with PB, banana and honey.
  • 1 cup raw sunflower seeds
  • 1/2 cup flax seeds
  • 1/2 cup sliced almonds
  • 1 1/2 cups rolled oats
  • 2 tbsp chia seeds
  • 3 tbsp psyllium seed husk powder
  • 1 tsp salt
  • 1 tbsp honey, warmed
  • 3 tbsp coconut oil, melted
  • 1 1/2 cups water, warm
Directions:
  •  In a bread loaf pan (no bowl needed!), combine all the dry ingredients.
  • In another bowl, combine the whisk together water, honey and coconut oil (I had mine heated because the cold water will solidify the coconut oil)
  • Add the liquid mixture to the dry ingredients and combine until completely soaked through
  • Smooth the top and let it sit at room temperature 2-4 hours, or even overnight
  • Preheat oven to 350
  • Bake bread for 20 mins, then remove bread from pan and place it upside down directly on the rack and bake another 30-40 minutes (I placed a sheet pan on the rack below the bread incase any crumbs fell)
  • Let cool completely before slicing.
