Quinoa Veggie Mac and Cheese


  • 1 cup quinoa, uncooked
  • 1 cup shredded cheddar cheese(or any other cheeses would work as well)
  • 1-2 zucchini, chopped into small pieces
  • 1/2 onion, chopped into small pieces
  • 1/2 cup milk
  • 1 egg
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • olive oil, salt, pepper
  • 2 cups water
  • bread crumbs and parmesan cheese for sprinkling


  • In a deeper pan, saute zucchini, onion and garlic in olive oil with salt, pepper and red pepper flakes
  • Add the quinoa and cook for about 5ish minutes
  • Add your 2 cups of water and then cover pan and let quinoa/veggie mix on medium until almost all the water has been absorbed
  • Meanwhile, in a small bowl, mix your milk, egg and cheese together
  • When the quinoa is done, mix in your cheese mixture
  • Pour into a prepared 9x9in glass baking dish and sprinkle with bread crumbs and parmesan
  • Bake 35 mins at 350 degrees
  • Enjoy!
