Quinoa Veggie Mac and Cheese
Ingredients
- 1 cup quinoa, uncooked
- 1 cup shredded cheddar cheese(or any other cheeses would work as well)
- 1-2 zucchini, chopped into small pieces
- 1/2 onion, chopped into small pieces
- 1/2 cup milk
- 1 egg
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes
- olive oil, salt, pepper
- 2 cups water
- bread crumbs and parmesan cheese for sprinkling
Directions
- In a deeper pan, saute zucchini, onion and garlic in olive oil with salt, pepper and red pepper flakes
- Add the quinoa and cook for about 5ish minutes
- Add your 2 cups of water and then cover pan and let quinoa/veggie mix on medium until almost all the water has been absorbed
- Meanwhile, in a small bowl, mix your milk, egg and cheese together
- When the quinoa is done, mix in your cheese mixture
- Pour into a prepared 9x9in glass baking dish and sprinkle with bread crumbs and parmesan
- Bake 35 mins at 350 degrees
