Carrot Cake Protein Pancakes

Ingredients   

For the Pancake: (Makes 1 large pancake)
  • 1/3 cup oats
  • 1/4 cup cottage cheese
  • 1 egg
  • 1 tbsp milk
  • 1/4 tsp vanilla
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • pinch each of nutmeg and allspice
  • dash of stevia
  • 1/4 cup shredded carrots
For the Icing
  • 3 tbsp plain greek yogurt
  • 1 tsp maple syrup
  • 2 tsp milk
  • dash of cinnamon
  • dash of stevia

Directions

  • Place all the ingredients for the pancake minus the carrots into a small food processor and blend until combined and fairly smooth.
  • Add carrots and stir in
  • Pour batter on a preheated griddle or skillet that has been sprayed with cooking spray
  • Cook like a normal pancake, although little bubbles may not form
  • While you pancake is cooking, mix the ingredients for the frosting
  • When pancake is done, spread with frosting mix and then devour!


  • 3 TBSP plain Greek yogurt
  • 1 tsp maple syrup
  • 2 tsp milk {any type: 1%, skim, unsweetened vanilla almond milk}
  • dash of cinnamon
