Ingredients
For the Pancake: (Makes 1 large pancake)
- 1/3 cup oats
- 1/4 cup cottage cheese
- 1 egg
- 1 tbsp milk
- 1/4 tsp vanilla
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- pinch each of nutmeg and allspice
- dash of stevia
- 1/4 cup shredded carrots
For the Icing
- 3 tbsp plain greek yogurt
- 1 tsp maple syrup
- 2 tsp milk
- dash of cinnamon
- dash of stevia
Directions
- Place all the ingredients for the pancake minus the carrots into a small food processor and blend until combined and fairly smooth.
- Add carrots and stir in
- Pour batter on a preheated griddle or skillet that has been sprayed with cooking spray
- Cook like a normal pancake, although little bubbles may not form
- While you pancake is cooking, mix the ingredients for the frosting
- When pancake is done, spread with frosting mix and then devour!
- 3 TBSP plain Greek yogurt
- 1 tsp maple syrup
- 2 tsp milk {any type: 1%, skim, unsweetened vanilla almond milk}
- dash of cinnamon
