Crockpot Cashew Pork (freezer meal)
Ingredients for Freezer Bag:
- 2
pounds boneless pork chops, cut into 1 inch cubes
- 1/4 cups
soy sauce
- 2 tbsp
rice wine vinegar
- 1 tbsp tomato paste
- 1 tbsp brown sugar
- 1 tsp
minced garlic
- 1 tsp
grated fresh ginger
- 1/4 tsp red pepper flakes
Ingredients for Cooking Day:
- 2 cups sliced bell peppers (I used red and yellow)
- 1/2 cup
cashews, roughly chopped
- 1/4 cup
chopped green onions
- Cornstarch
- Brown Rice for serving
Directions:
- Place all of the freezer ingredients into a gallon(or 1/2 gallon) sized freezer bag and kind of shake it up to mix everything together.
- Cooking day:
- Thaw the freezer bag the night before day making
- Empty the contents into a crockpot and cook on low for about 5 hours
- Add in the peppers and cook for another hour (can also slice up the peppers when you make the meal to freeze and place in a separate bag with a note to add in last hour of cooking)
- Dissolve cornstarch in warm water and stir into pork/pepper mixture, the amount is up to you depending on how thick you want the sauce to be
- Stir in the green onions and cashews and serve over brown rice
