Crockpot Cashew Pork (freezer meal)



Ingredients for Freezer Bag:

  • 2 pounds boneless pork chops, cut into 1 inch cubes
  • 1/4 cups soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp minced garlic
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes

Ingredients for Cooking Day:


  • 2 cups sliced bell peppers (I used red and yellow)
  • 1/2 cup cashews, roughly chopped
  • 1/4 cup chopped green onions
  • Cornstarch
  • Brown Rice for serving

Directions:


  • Place all of the freezer ingredients into a gallon(or 1/2 gallon) sized freezer bag and kind of shake it up to mix everything together.
  • Cooking day: 
    • Thaw the freezer bag the night before day making
    • Empty the contents into a crockpot and cook on low for about 5 hours
    • Add in the peppers and cook for another hour (can also slice up the peppers when you make the meal to freeze and place in a separate bag with a note to add in last hour of cooking)
    • Dissolve cornstarch in warm water and stir into pork/pepper mixture, the amount is up to you depending on how thick you want the sauce to be
    • Stir in the green onions and cashews and serve over brown rice
