Sweet Mango Farro

After our Sriracha Fried Rice we wanted something a little sweet. Although I didnt necessarily want more 'rice' on top of our rice dinner, it was so worth it. This recipe is soooo easy to make, I adapted it from Simply Yum and I definitely think I will be making this more often, and we were talking about making it with pineapple too sometime. Raymond doesnt really like coconut, but he liked this even though it has coconut milk in it, so I consider it a success :) Enjoy!

Sweet Mango Farro

Ingredients
  • 3/4 cup farro, uncooked
  • 1/4 cup coconut milk
  • 1/4 cup sugar
  • 1 mango chopped
 Directions
  • Cook the farro according to package(basically cook like pasta and then drain when its done)
  • Heat the coconut milk and sugar in a small pan until the sugar is dissolved
  • Pour the milk/sugar mixture over the farro and add the mango. Mix it all up.
  • Let the farro sit for a few minutes to let the mixture soak in and spread the flavor and then enjoy!
