Cranberry Chia Bars

Here's one of my other snacks I made this morning. They have a little bit of a crunch to them which is nice and its got a different flavor than what I usually make. I was pretty satisfied with them :)

Cranberry Chia Bars

Ingredients
  • 1 cup almonds
  • 1/2 cup pitted dates
  • 1/3 cup natural peanut butter
  • 3 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 tbsp honey
  • 1/4 cup dried cranberries for topping
Directions
  • Place almonds in food processor and process until coarse
  • Add all remaining ingredients minus the cranberries and process until its mixed(make sure the mixture is 'wet' enough otherwise they wont stick together and your bars will be a crumbly mess, add a little water if needed)
  • In a bread pan lined with waxed paper, press the mixture. 
  • Sprinkle the cranberries on top and then mush them down into the mixture
  • Refrigerate a few hours to set before cutting(a pizza cutter works great)
