Pecan Turtle Chia Pudding

Caramel Turtle Chia Pudding 1 

You want something chocolatey, delicious, and nutritious?? Then this is definitely what you want to grab for dessert. Chia seeds, date 'caramel', pecans, chocolate. What more could you want?? Can I mention how much I LOVE chia seeds, plus the fact that they amaze me pretty much everytime I use them how they thicken up like tapioca. Anyways, you have GOT to try this :)

Pecan Turtle Chia Pudding

Ingredients

Pudding:
  • 2 ounces Unsweetened Chocolate chopped (you could probably use cocoa powder too, but I havent tried that yet)
  • 1 cup Water you can use almond milk or soy milk for a richer pudding (I use half water, half vanilla soy milk)
  • ½ cup Chia Seeds
  • ½ cup Unsweetened Yogurt (I use plain Fage greek yogurt)
  • 1 teaspoon Vanilla
Caramel:
  • 8 Medjool Dates (remove pits)
  • 1 teaspoon Peanut Butter
  • ¼ cup Water
Mix ins:
  • ¼ cup Pecans
Instructions
  1. In a medium microwave safe bowl add the chocolate and water
  2. Microwave until the chocolate is melted, about 45 seconds
  3. Stir well to combine
  4. Add the chia seeds to the hot chocolately liquid
  5. Set aside to cool, about 5 minutes
  6. While the mixture with the chia seeds is cooling, make your caramel by mashing up the dates and peanut butter using a fork in a bowl (or you can use the food processor)
  7. Once the dates are well mashed, add the water and mix well, it should look like a thick caramel sauce when ready
  8. Stir the yogurt, vanilla, caramel,and pecans into the chia and choco water mixture
  9. Stir well to combine
  10. Cool if desired, or start eating right now!!
