Cranberry Chia Bars
Ingredients
- 1 cup almonds
- 1/2 cup pitted dates
- 1/3 cup natural peanut butter
- 3 tbsp chia seeds
- 1 tsp vanilla extract
- 1 tbsp honey
- 1/4 cup dried cranberries for topping
- Place almonds in food processor and process until coarse
- Add all remaining ingredients minus the cranberries and process until its mixed(make sure the mixture is 'wet' enough otherwise they wont stick together and your bars will be a crumbly mess, add a little water if needed)
- In a bread pan lined with waxed paper, press the mixture.
- Sprinkle the cranberries on top and then mush them down into the mixture
- Refrigerate a few hours to set before cutting(a pizza cutter works great)
